Duvan čvarci, jedan su od najukusnijih specijaliteta valjevskog kraja i zapadne Srbije, omiljeni zalogaj mnogih gurmana. Slani a tako slatki! Duvan čvarci su od 2004. godine zaštićeni brendom. Festival čvaraka

Nosilac prava na tradicionalni valjevski specijalitet od svinjskog mesa je Slavan Batočanin. Zahvaljujući njegovoj inicijativi je pokrenut i Festival duvan čvaraka, koji već 12 godina u oktobru u Valjevo privlači brojne goste.

Festival čvaraka ili popularna Čvarkijada je privredna manifestacija, jer se za dan proda pet tona duvan čvaraka i oko 10 tona svinjske masti, kaže Slavan Batoćanin, organizator Festivala duvan čvaraka. On dodaje: Dnevno se sad izvozi dve tone, dve tone iz Valjeva, na razne načine. Imamo problem, jer nemamo starije svinje, da kažem, krmače, pa ih uvozimo sa strane, iz Rume i Sremske Mitrovice.

Na Čvarkijadi posetioci mogu da degustiraju i kupe duvan čvarke. Mogu da vide kako se sprema ovaj mesni delikates po receptu starom dvesta godina, na jedinstven način, poznat samo u valjevskom kraju.

Nema laži, nema varke, mi pravimo najbolje čvarke! – glasi moto Čvarkijade, a vi probajte i uverite se sami.

Tajna dobrih duvan čvaraka je u njihovom dugotrajnom kuvanju, posle čega se prže, a potom cede kroz lanenu tkaninu. Treba znati kada prekinuti. Loženja, mešanja, svega ima, da bi ispao dobar duvan čvarak – tvrde eksperti.

Duvan čvarci najbolje idu uz rakiju, ali treba voditi računa da se mesari iliti majstori za čvarke, ne predoziraju napitkom od šljivovice, inače ništa od čvaraka. Može i mast da ode u propast.

Zašto duvan čvarci?

Duvan čvarci deo su srpske nacionalne kuhinje, a ime su dobili po tome što su končasti i njihov oblik podseća na seckani duvan.

Pikantni su, savršenog ukusa i mirisa, tope se ustima. Valjevsko zlato ukras je mnogih trpeza, naročito u zimskim danima, u vreme praznika i proslava. Služe se kao predjelo, uz kajmak, sir, urnebes salatu, turšiju, razne salate.

U Srpskom narodnom kuvaru, čuveni kuvar Milijan Stojanić deli svoj recept za duvan čvarke.

Duvan čvarci – the brand of Valjevo and our favorite winter treat

One of the tastiest specialties of the Valjevo area and Western Serbia, a favorite morsel of many a gourmet. Savory but so sweet!

As of 2004 duvan čvarci have been protected as a brand, and the right holder who has the legal rights to this traditional pork meat specialty of Valjevo is Slavan Batoćanin. Thanks to his initiative the Duvan Čvarci Festival has been held in October in Valjevo for 12 years attracting many guests.

Čvarci Festival

The Čvarci Festival or Čvarkijada is an economic event because 5 tons of duvan čvarci and around 10 tons of lard are sold for one day of the festival, says Slavan Batoćanin, the organizer of the Duvan Čvarci Festival, and adds: We export two tons daily from Valjevo, in various ways. We have a problem because we don’t have old pigs, sows, to put it that way, so we have to import them from Ruma and Sremska Mitrovica.

Visitors can taste and buy duvan čvarci at Čvarkijada, to see how this delicacy is prepared to a 200-year-old recipe, in a unique way known only in the Valjevo area. 

No lie, no pretense, we make the best čvarci! – this is the motto of Čvarkijada, and you try them and see for yourself.

The secret of good duvan čvarci is to cook them for a long time, then to fry them, and then strain them through a linen cloth. You should know when to stop. Stop feeding the fire, stirring, everything, to make a good duvan čvarak – the experts claim.

Duvan čvarci are best served with rakija, but make sure butchers or čvarci masters don’t drink too much of this plum beverage, or you won’t get your čvarci. The fat is in the fire then!

Why duvan (tobacco)?

Duvan čvarci are part of Serbian national cuisine, and they were named after their shape, they are like threads which look like chopped tobacco. 

They are savory, taste and smell perfect; they simply melt in your mouth. Valjevo’s gold decorates many tables, especially in winter time and during the holiday season. It can be served as an appetizer, with kajmak, cheese, pickled vegetables, various salads.

In Serbian National Cookbook, the famous cook Milijan Stojanić shares his recipe for duvan čvarci.
